INGREDIENTS

  1. 1 cup plain non-dairy yogurt (such as soy, coconut, or almond yogurt)

  2. 1 medium cucumber, peeled and grated

  3. 2 cloves garlic, minced

  4. 2 tbsp fresh dill, chopped

  5. 1 tbsp lemon juice

  6. Salt and pepper to taste

    In a medium bowl, combine the non-dairy yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice. Mix well.

    Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld together.
